Guest Chef Davide Calò At Intercontinental Saigon

Born and raised at “the heel” of Italy, the beautiful Puglia of whitewashed hill cities, Chef Davide Calò has under his belt a wealth of 20 years experience and is now the Chef de Cuisine of the five-star Kimpton Maa-lai Bangkok, Thailand. In this special appearance at Basilico, Chef Davide will present 15 signature dishes that have played a part in making Ms. Jigger a social magnet in Bangkok.

To get started with our special menu, you can safely choose the iconic Caprese Salad or the signature Ms. Jigger Salad with stracciatella cheese, fresh and sun-dried vegetables. If you are going savory for the starters, then absolutely try out one of the tartare or carpaccio, including the Amberjack Carpaccio, the Wagyu Tartare with Quail Egg and Black Truffle, or the Red Tuna Tartare.

It would not be an Italian menu without some pasta and risotto, and Chef Davide will be leaving you in a dilemma choosing between the dishes on this featured menu. It could be the spectacular Risotto with Pecorino cheese and Argentinian red prawn tartare, or the Spaghetti with marinated fresh red tuna. Other choices of this section include the Risotto with Italian sausage, porcini and black truffle, the Orzo spaghetti with mullet bottarga, and the Fettuccine spaghetti with sliced fresh truffle.

For the main courses, the soul of every meal, Chef Davide will also present 5 supreme options. For the “amanti del mare” (lovers of the sea), we have the Baked toothfish with topinambur veloute, the Tuna in black sesame crust, and the Pan-seared scallops with truffled green pea cream. On the other hand, discerning fans of premium meat dishes can be satisfied with the Grilled Pluma Iberico with gorgonzola puree and asparagus, or the Sliced Wagyu sirloin with Parmesan flakes.
